Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For the Cream- Cheese Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions:

  1. Preheat the oven to 350°F. Grease two 9-inch cake pans and line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the two- cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  6. Allow the cakes to cool completely in the pans.
  7. While the cakes are cooling, prepare the cream cheese frosting. In a large mixing bowl, beat the butter and cream cheese together until smooth and creamy. Add the powdered sugar, vanilla extract, and salt, and continue to beat until the frosting is light and fluffy.
  8. Once the cakes have cooled, remove them from the pans and place one layer on a serving plate or cake stand.
  9. Spread a thick layer of cream cheese frosting on top of the first layer, then place the second layer on top.
  10. Frost the top and sides of the cake with the remaining cream cheese frosting.
