Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 4 large eggs, at room temperature
  • 1 cup whole milk, at room temperature
  • 1 tablespoon vanilla extract
  • Red, orange, yellow, green, blue, and purple food coloring
  • 4 cups of your favorite frosting (homemade or store-bought)

Instructions:

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. Add the butter and mix on medium speed until the mixture is light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the milk and vanilla extract until everything is well combined.
  6. Divide the batter evenly into 6 small bowls.
  7. Add a few drops of food coloring to each bowl, using red, orange, yellow, green, blue, and purple to create the rainbow colors.
  8. Grease and flour three 8-inch cake pans.
  9. Spoon the colored batter into the prepared cake pans, alternating colors to create a rainbow effect.
  10. Bake the cakes for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  11. Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on wire racks.
  12. Once the cakes are completely cool, stack the layers on top of each other, spreading a layer of frosting between each layer.
  13. Frost the top and sides of the cake with the remaining frosting.

Decorate the top of the cake with sprinkles, if desired.
