Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1/2 cup buttermilk

Directions: 

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Stir in the mashed bananas and mix until well combined.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk, and mix until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
