Taco Soup- Step by step

And with so many toppings to choose from, like shredded cheese, sour cream, diced avocado, and crushed tortilla chips, you can customize each bowl of soup to your liking.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 packet taco seasoning
  • 4 cups beef broth
  • Salt and pepper to taste
  • Toppings (optional): shredded cheese, sour cream, diced avocado, chopped cilantro, tortilla chips

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess fat.
  2. Add the diced onion and bell pepper to the pot and sauté until they are tender, about 5 minutes.
  3. Add the black beans, pinto beans, corn, diced tomatoes, tomato sauce, taco seasoning, and beef broth to the pot. Stir everything together.
  4. Bring the soup to a boil, then reduce the heat to medium-low and let it simmer for 20-30 minutes.
  5. Taste the soup and add salt and pepper as needed.
  6. Serve the soup hot, topped with shredded cheese, sour cream, diced avocado, chopped cilantro, and/or crushed tortilla chips if desired.
