Making your own curd is a simple and rewarding process that yields a delicious and versatile spread. Whether you use it as a filling for cakes and tarts, a topping for yogurt or ice cream, or simply as a spread on toast, this curd is sure to brighten up any dish.

Ingredients:

  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice (about 4-5 lemons)
  • 1 tablespoon grated lemon zest
  • 1/2 cup unsalted butter, cubed

Instructions:

  1. In a medium-sized saucepan, whisk together the sugar and eggs until well combined.
  2. Add the lemon juice and zest to the saucepan and whisk until smooth.
  3. Add the cubed butter to the saucepan and place it over medium heat. Stir constantly with a whisk until the butter has melted.
  4. Continue to cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 10-15 minutes.
  5. Remove the saucepan from the heat and strain the lemon curd through a fine-mesh sieve to remove any lumps or bits of zest.
  6. Transfer the lemon curd to a jar or container and let it cool to room temperature.
  7. Once the lemon curd has cooled, cover it and store it in the refrigerator for up to two weeks.
