Ingredients:

  • 4 pears, peeled and cored
  • 1 cup red wine
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 cinnamon stick
  • 1 vanilla bean, split lengthwise
  • 1 tablespoon lemon juice
  • Whipped cream, for serving

Instructions:

  1. In a large saucepan, combine the red wine, water, sugar, cinnamon stick, vanilla bean, and lemon juice. Stir well and bring to a boil over medium heat.

  2. Reduce the heat to low and add the pears to the saucepan. Cover the pan and simmer for 20-25 minutes, or until the pears are tender when pierced with a fork.

  3. Using a slotted spoon, remove the pears from the poaching liquid and set them aside.

  4. Increase the heat to high and boil the poaching liquid until it is reduced by half and has a syrup-like consistency.

  5. Remove the cinnamon stick and vanilla bean from the saucepan and discard.

  6. To serve, place each pear on a plate and drizzle with the reduced poaching liquid. Add a dollop of whipped cream, if desired.
