Homemade marshmallows step by step

Homemade marshmallows are a fun and delicious treat that can be made in your own kitchen. They are soft, fluffy, and have a distinct texture and flavor that sets them apart from the one who are store-bought.

To make homemade marshmallows, you will need gelatin, sugar, corn syrup, water, and flavorings (such as vanilla extract). You will also need a candy thermometer, a stand mixer or hand mixer, and a large mixing bowl. Follow these easy steps to make your own marshmallows and enjoy the sweet and fluffy goodness!

Ingredients:

  • 3 packets (21g each) unflavored gelatin
  • 1 cup cold water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 cup cornstarch
  • 1/2 cup powdered sugar

Instructions:

  1. In a large mixing bowl, sprinkle the gelatin over 1/2 cup of cold water and let it sit for 10 minutes.
  2. In a medium saucepan, combine the granulated sugar, corn syrup, salt, and remaining 1/2 cup of cold water.
  3. Cook the mixture over medium heat, stirring constantly, until the sugar has dissolved.
  4. Increase the heat to high and bring the mixture to a boil.
  5. Do not stir the mixture once it starts boiling and let it boil for 1 minute.
  6. Remove the mixture from the heat and carefully pour it into the bowl with the gelatin mixture.
  7. Using an electric mixer, beat the mixture on high speed for 10-15 minutes or until the mixture becomes thick and fluffy.
  8. Add the vanilla extract and mix until well combined.
  9. In a small bowl, mix together the cornstarch and powdered sugar.
  10. Dust a 9×13 inch baking dish with the cornstarch mixture.
  11. Pour the mixture into the prepared baking dish and smooth it out with a spatula.
  12. Dust the top of the marshmallows with more of the cornstarch mixture.
  13. Let the mixture sit at room temperature for at least 4 hours or overnight to set.
  14. Once set, remove the marshmallows from the baking dish and cut them into squares using a sharp knife or scissors.
  15. Dust the cut edges of the marshmallows with the remaining cornstarch mixture.
  16. Store the marshmallows in an airtight container at room temperature for up to 2 weeks.
